Ragi banana muffins

The only Ragi Banana Muffins recipe you will ever need!

Hey there, lovely folks! Today, I’m thrilled to share with you my recipe for Ragi Banana Muffins. Here’s what you’ll need:

Ingredients

  • – 1.5 cups mashed bananas
  • – 1 egg
  • – 1/3 cup oil
  • – 1 cup jaggery
  • – 1/4 cup milk
  • – 1.5 cups ragi flour
  • – 1/4 cup cocoa powder
  • – 1 tsp baking soda
  • – 1/4 tsp baking powder
  • – 1/2 cup mini chocolate chips or chopped walnuts
  • – 1/4 tsp salt
  • – 1 tsp vanilla extract
  • – 1/4 tsp instant coffee powder ☕

Method

  1. Preheat the oven to 180°C for 15 minutes.
  2. Take 1.5 cups of mashed banana in a bowl.
  1. Transfer the mashed banana into a large bowl. Add the jaggery and beat the banana and jaggery for 2 minutes.
  2. Then add the oil and beat again. Next, add the egg and vanilla, and beat for another minute.
  1. For the dry ingredients, place a sieve over the bowl and add the ragi flour, baking soda, baking powder, cocoa powder, salt, and coffee powder. Mix well and sieve it into the bowl.
  2. Combine the wet and dry ingredients gently; don’t overmix the batter.
  1. Add the chocolate chips and mix in.
  2. Line a muffin tray with paper liners. Fill the liners about halfway with the batter. Tap the tray on the counter to remove air bubbles.
  3. Bake in the preheated oven for 16-18 minutes or until a skewer comes out clean.
  4. Once done, remove the muffins and bake the next batch.

Notes:

  1. Do not overmix the batter; soft muffins are the goal!
  2. You can opt for walnuts instead of chocolate chips.
  3. Ripe bananas yield tastier muffins.
  4. Adding coffee powder is optional but adds a delightful flavour.
  5. Feel free to use any healthy sugar substitute.
  6. You can use up to 400 gms of mashed banana for extra goodness.
